Cool balmy climes and close husbanding of vines are essential for splendid Pinot Gris wines which engage the palate while calling for cuisine. Pampered parcels of grey Pinot grapes are treated to a natural indigenous yeast ferment, a course of maturation on fluffy lees and term of age in fine French oak, bottled unfined for maximum sauvage. Steeped on skins for optimal uptake of the distinctive Gris blush, its comely copper hues and Anzac biscuit nose, precedes a food friendly palate of baked cloven pears and crunchy Granny Smith acidity.

Witchmount are fortuitously positioned within the temperate microclimes of Sunbury, just the right confluence of conditions to yield a style of Shiraz Grenache that's so evocative of the chilly Mistral winds which stimulate vineyards along Vallée Rhône. An equal balance of parts, Grenache is included as whole bunches, Shiraz berries are destemmed, treated to traditional open top ferments and six months gross lees maceration for exceptional richness and integration. A decidedly juicy, cherry flavoured accord of dark licorice tannins, bucolic herbaceousness and sylvan, pastoral grace.

Half Chardonnay, the balance in Sauvignon Blanc and Pinot Gris, this is not the first time that such an unlikely cépage of fruit have been assembled into a single wine. The propitious Witchmount vines are not far from from the relative comfort of Melbourne city but the surrounding Sunbury mesoclimes are very cool climate indeed. These are parts that are highly opportune for yields of Cabernet Sauvignon, characterised by intensely flavoured little berries lined with refined, elegant tannins. The closest husbandry and an uncompromising standard of viticulture, mean that Witchmount can produce one of Victoria's stateliest Cabernet wines, crafted to a style that's so evocative of her siblings from Bordeaux.

Shiraz grapes are sourced from the estate's Ghorepani block, an east facing vineyard planted to well drained, fertile soils. A close affinity to the land, respect for the vine and dedicated viticulture is the key to making a resplendent Victorian Shiraz, with the emphasis on maximising grape quality through sustainable agriculture. Wildwood are recognised for their consistency and purity of varietal character. Despite the adversity of limited rainfall, Wildwood consistently yields the quality of intense, ripe Shiraz fruit for which Sunbury is renowned.

Wildwood's vines are planted to the nethermost terroirs of the Sunbury region, where the cool, dry climes under the shadows of Mt. Macedon, serve to concentrate and intensify characters in the grapes. History records that great wines were made in this area from as far back as the early 1800s. Viticulture was re-established in 1983, the Pinot Noir grown here translates into vigorous wines with distinctive varietal expressions. Effulgent acids, complimenting oak and spritely tannins support generous fruit characters, licorice, cherries and plum.

Established 1968 by the legendary Melbourne restaurateur Tom Lazar, Virgin Hills is the gem of the Macedon Ranges, one of Australia's iconic vineyards. He planted Cabernet Sauvignon and Shiraz, Malbec, Merlot and Pinot Noir, with a view to creating an Australian first growth to rival the great Bordeaux he had grown to love while working as a sculptor in Paris. Only one wine is bottled under the Virgin Hills label each year. From inaugural release, the cepage of varietals has varied subtly each vintage, adding to the mystique and complexity of Virgin Hills.

The higher altitudes of Adelaide and balmy aspects of Bellarine are the pre-eminent Australian microclimes for growing Pinot Grigio. An intense expression of pear, guava and citrus, fleshy with a mineral backbone. The fruit of Swinburn Vineyard is defined by its dark red fruit pectins, thick skinned cherries and dewy bramble, a curl of cedar oak and twist of the spice mill, a seamless ruby tannin finish.

Robin Brockett has been chief winemaker at Scotchmans Hill since the 1980s, he knows Bellarine's best growers and is completely conversant with every microclime around the greater Geelong. Amphora is the Tete de Cuvee, the top cut of Shiraz from the most superior vineyards, a cull so strict, that only a hundred cases are made. Its dulcetly sweet perfumes of peppery plum are unlocked by a measure of the fragrant Viognier, underpinned by silky chocoate tannins, lingering on a velvet length of raspberries, rose petal and turkish delight.

Provenance was established with the objective of making great wines that exhibit the quality of fruit and terroir from choice vineyards in and around the Geelong viticultural precinct. The most pristine grapes are assembled from the Provenance Moorabool Valley property. A component of the finest Bellarine Pinot Noir from the proven Grassy Point site is included. Parcels from the eminent Pierrepoint vineyard at Henty adds another dimension. A portion from the Sinclair property near Ballarat, grown to ancient ordovician soils at 500 metres contributes wonderful bright fruit.

Alluringly complex with lifted scents of strawberry, beetrots and plum, its cherry sweetness and pastoral savouryness resolve on a satin sheened, spiced oak finish, ripe fine grain tannins assuring structure, balance and controlled power.
